Cobblers, Crisps & Crumbles
Traditional American fruit desserts (many of them British in origin) have some of the more colorful names in our humble cuisine. There are fools, grunts, slumps, dowdies, betties, crisps, cobblers, and crumbles. Many of the more esoteric desserts (such as a grunt) are pretty much the province of historical cookbooks, but crisps, cobblers, and crumbles have all made the leap from the past to the present, and hopefully into the delicious future. What follows are a bunch of dessert recipes that respect the original nature of the dish, but have been given healthy makeovers.
