Fat-Free Salad Dressings
We thought we would experiment with homemade fat-free salad dressings. The trick was to find something that could replace the "mouth feel" of oil but not add any fat. The solution was threefold: We tried using gelatin, cornstarch, and pectin: three fat-free thickeners. The results were great. Try the Fat-Free Balsamic Vinaigrette (thickened with cornstarch), the Fat-Free Pineapple-Tarragon Dressing (thickened with fruit pectin), or the Carrot-Orange Dressing (thickened with gelatin).
