Flour Tortillas
The round, thin, flexible flatbreads called tortillas have been called into service way beyond their traditional beginnings in Mexican and Tex-Mex cuisines. Because they are so flexible, and because they come in such a wide range of sizes--from 6 inches in diameter up to 10 inches, and sometimes more--they can be used for wrapping sandwich fillings, standing in for the traditional pancakes in a Moo Shoo chicken dish, or used to make chips for dips. They can even be used for making dessert. Naturally, they are also the best for their traditional uses: holding grilled meat for fajitas, or making enchiladas and quesadillas.
