Healthy Holiday Appetizers
The holidays can wreak havoc with diets, and it's especially hard for a host or hostess who wants to entertain well, but not with unhealthy food. Here is a collection of guest-satisfying appetizers that have a healthful nutritional profile. If you opt for the Roasted Eggplant "Caviar," you'll be providing a good helping of fiber and B vitamins for only 70 calories per serving. If you serve the Pepper Cheese Quesadillas with Honey Mustard, you'll be giving your guests some yummy melted cheese, but keeping the fats levels reasonable by using reduced-fat cheese and including healthful, vitamin C-rich bell peppers. The cubes of Sesame-Ginger Tofu (only 18 calories apiece) are a rich source of isoflavones.
