Apple-Rum Sundaes
This spicy autumn dessert is like apple pie a la mode, minus the fat and calories--and trouble--of a dessert with a pie crust.
  • 1 tablespoon unsalted butter
  • 1 tablespoon extra-light olive oil
  • 3 large apples, peeled and thinly sliced
  • 2 tablespoons brown sugar
  • Pinch of ground ginger
  • Pinch of ground coriander
  • 1/4 cup dark rum
  • 1-1/2 tablespoons currants
  • Zest of 1 orange
  • Apple cider or apple juice (optional)
  • 1 pint vanilla low-fat frozen yogurt

1. In a large nonstick skillet, melt butter in oil over medium heat. Add apples, brown sugar, ginger, and coriander. Saute until apples have softened, two to five minutes, depending on firmness of apples.

2. Add rum, currants, and orange zest, and bring to a boil. Remove pan from heat. If sauce is too thick, add splash of apple cider. Serve warm over frozen yogurt.
