Gingered Pink Grapefruit Salsa
This fresh-tasting citrus salsa goes well with broiled chicken or fish, but it could also be nice on its own as a fruit salad or even a dessert.
  • 2 large pink grapefruits
  • 1 navel orange
  • 1 tablespoon honey
  • 1 tablespoon minced crystallized ginger
  • 1-1/2 teaspoons raspberry vinegar or 1 teaspoon red wine vinegar

1. Remove peel and white pith from grapefruits and orange. Working over a bowl, cut out sections from between membranes, letting them drop into bowl. Squeeze juice from membranes of orange and 1 of grapefruits into bowl. Cut grapefruit sections in half.

2. Stir in honey, crystallized ginger, and vinegar. Set salsa aside.
