Provençal Tuna Burgers
Serve these tuna bugers with a potato salad and steamed green beans and you will have reassembled all the components of a Salade Niçoise on your plate. If you can't stand to have a burger without a bun, we recommend thin slices of toasted sourdough bread.
  • 2 cans (6 ounces each) water-packed albacore tuna, drained
  • 1 large egg
  • 4 scallions, coarsely chopped
  • 1/2 cup chopped fresh basil
  • 3 tablespoons plain dried breadcrumbs
  • 2 tablespoons light mayonnaise
  • 1 tablespoon minced capers
  • 2 teaspoons olive oil
  • 1/4 teaspoon salt

1. Stir together tuna, egg, scallions, basil, breadcrumbs, mayonnaise, capers, oil, and salt in large bowl until well combined.

2. Form mixture into four 4-inch patties, a scant 1/2 inch thick.

3. Preheat broiler. Broil patties 4 inches from heat, carefully turning once, until firm and lightly golden, about 2-1/2 minutes per side.
